Cassava Cream with Chicken

  • 300g cassava
  • 200g chicken fillet
  • 1 small onion, chopped
  • 2 garlic cloves, crushed
  • Fresh parsley to taste, chopped
  • Fresh chives to taste, chopped
  • Natural seasonings to taste
  • Salt
  • Water

Instructions:

Cook the chicken in a pot with water. At the same time, cook the cassava with water in a pressure cooker. Once the chicken is cooked, turn off the heat, shred it and season. Set aside.

After the cassava is cooked, turn off the heat. Wait for the pressure cooker to release all pressure naturally — do not place it in water. Only then should you open the pressure cooker lid.

Blend the cassava with a little of its cooking water in a blender or hand mixer. If using a blender, hold the lid down while blending to avoid leaks.

Sauté the onion and garlic in a large pan. Carefully pour in the cassava broth and mix well. Taste and adjust the salt. Add the shredded chicken, parsley, and chives. Mix well. Turn off the heat and serve.
