Ricotta Pie

Light, smooth, and incredibly easy to make — this ricotta pie comes together in minutes with just a few simple ingredients. No fuss, no special skills required. Just a perfectly creamy, delicate dessert that looks and tastes far more impressive than the effort involved.

Want to make it your own? Try folding in a handful of raisins or small chunks of guava paste into the filling before baking.

Ingredients:

  • 2 cups ricotta (300g)
  • 5 eggs (250g) ½ tsp vanilla extract
  • 1 cup heavy cream (200g)
  • 1 tsp lemon zest
  • 1 cup sugar ¼ cup diced guava paste (or raisins)

Instructions:
1. Preheat oven to 480°F (250°C). Grease an 8-inch (20cm) round pan with butter and flour.
2. Add all ingredients to a blender: ricotta, eggs, vanilla extract, heavy cream, lemon zest and sugar. Blend for 5 minutes.
3. Pour the batter into the prepared pan.
4. Gently place the diced guava paste (or raisins) on top of the batter.
5. Bake until the surface is lightly golden and a toothpick inserted into the center comes out almost clean.
Unmold onto a plate.
