Ratatouille – Roasted Vegetables
Ratatouille is a classic dish from French cuisine, originating in the Provence region. Vegetarian and vibrant, it is made with fresh vegetables sliced into rounds and elegantly arranged in order over a delicious homemade tomato sauce. The beauty of the dish lies in its presentation — the overlapping slices of eggplant, zucchini, bell pepper, and tomato create a restaurant-worthy visual. Baked in the oven with olive oil and aromatic herbs like basil, rosemary, and thyme, the result is a light, nutritious, and incredibly flavorful dish. It can be served on its own or as a side dish alongside roasted meat.

Ingredients – Ratatouille:
- 1 eggplant
- 1 zucchini
- 1 green bell pepper
- 1 yellow bell pepper
- 3 ripe tomatoes
- 2 onions
- 3 tablespoons olive oil
- 1 sprig of fresh basil
- 1 sprig of fresh rosemary
- 1 teaspoon thyme
Ingredients – Sauce:
- 2 tablespoons olive oil
- 2 garlic cloves, crushed
- ½ onion, finely chopped
- 2 tomatoes, finely chopped
- ½ cup water
- Salt to taste
Instructions – Sauce:
Start by making the sauce. Heat the two tablespoons of olive oil in a pan, lightly fry the crushed garlic and add the chopped onion, sauté until softened. Add the chopped tomatoes and sauté for a few minutes. Add the water and let it cook for about 3 minutes. Season with salt and add the fresh basil leaves. Pour into the baking dish you will be using and set aside.
Instructions – Vegetables & Assembly: Next, prepare the vegetables. First, cut all the vegetables into rounds. Start with the eggplant, cut into ½-inch rounds and soak in salted water for about 20 minutes. Then drain and pat dry. This removes some of the bitterness from the eggplant. Meanwhile, slice the zucchini, bell peppers, tomatoes, and onions.
Assembly: In the baking dish that already has the sauce on the bottom, start arranging the vegetable layers from the outside in. Place one round of each vegetable, alternating and standing upright. Do this all around the dish — it will look beautifully colorful! Once the dish is full, fill in any empty spaces with extra rounds until everything is tightly packed together. Drizzle olive oil on top with the herbs and thyme. Bake in the oven for 40 minutes and serve.
