Bacon Farofa

The side dish that transforms any meal A truly Brazilian dish.

Ingredients

  • 60 g bacon, diced
  • 1/2 tablespoon chopped onion
  • 1 garlic clove
  • 2 cups raw cassava flour
  • 1 tablespoon chopped parsley (optional)
  • Salt to taste
  • Black pepper to taste

Directions

Fry the onion together with the bacon until golden. Add the minced garlic and once it becomes fragrant, add the cassava flour and season with salt to taste.


Notes
About cassava flour: This ingredient is deeply Brazilian — it’s a staple food found throughout the country, from the Amazon to the Serra Gaúcha, and especially appreciated along the entire coast, where farofa is practically a religion at beach barbecues and seafood meals. It’s made from dried and ground cassava root and has a slightly toasted, nutty flavor unlike anything else.

Outside of Brazil: Don’t look for it in regular supermarkets — it’s not a common ingredient there. Your best option is a Latin market, a Brazilian market, or the international products section of large supermarkets. It may be labeled as cassava flour. It’s worth seeking out — there’s no substitute for the original!
